These are unmalted oats are de-husked, steamed, and then rolled between heat rollers to form flaked oats. The rolling and cooking process gelatinizes the starches contained in the grain, making those starches readily soluble and in your mash. This allows the grains to be added directly to your mash without having to cook them.
